  • 2 boneless, skinless chicken breasts
  • 300g Brussels sprouts
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt & black pepper to taste
  • Juice of lemon
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 tbsp flour
  • 1 cup milk
  • 2 cloves garlic, minced
  • ½ cup grated Parmesan
  • Salt & pepper to taste

Instructions

  1. Season chicken breasts with olive oil, garlic powder, onion powder, salt, pepper, and lemon juice. Grill on medium-high heat for 5-6 minutes per side until cooked through (internal temperature should reach 165°F).
  2. Toss halved Brussels sprouts with olive oil, salt, and pepper; spread on a baking sheet and roast at 200°C (390°F) for about 20 minutes until crispy.
  3. For the sauce, melt butter in a saucepan over medium heat. Stir in flour for 1 minute, then slowly whisk in milk until smooth. Add minced garlic and simmer until thickened; stir in Parmesan cheese until melted.
  4. Slice grilled chicken and assemble the bowl with roasted Brussels sprouts; drizzle generously with creamy sauce.
