  • 1 1/2 lbs boneless skinless chicken thighs
  • 1/4 cup fresh lime juice
  • 1/4 cup olive oil
  • 3 cloves garlic
  • 2 tsp ground cumin
  • 1 1/2 tsp ancho chili powder
  • 12 mini corn taco shells
  • 1 large avocado, cored and sliced
  • 1 small red or yellow onion, chopped
  • 3 Tbsp chopped cilantro
  • Salt and freshly ground black pepper

Instructions

  1. In a gallon-size resealable bag, combine chicken with lime juice, olive oil, garlic, cumin, chili powder, cilantro, salt, and pepper. Seal and massage to coat; refrigerate for at least 1 hour.
  2. Preheat grill to medium-high (425-450°F).
  3. Remove chicken from marinade and grill for 5–6 minutes per side until fully cooked (165°F internal temperature). Let rest for 5 minutes before dicing.
  4. Warm taco shells; fill with diced chicken and desired toppings (avocado, onions, cilantro). Serve warm.
