  • 1 tablespoon low sodium soy sauce
  • 1 1/2 tablespoons honey
  • 1 teaspoon ground cumin
  • 1 teaspoon grated garlic
  • 1 1/4 pounds boneless skinless chicken breasts
  • 3 cups diced watermelon
  • 1/4 cup diced red onion
  • 1 jalapeño (seeded and minced)
  • 2 tablespoons chopped cilantro
  • 2 tablespoons lime juice
  • Kosher salt and fresh ground black pepper to taste

Instructions

  1. In a mixing bowl, whisk together lime juice, olive oil, soy sauce, honey, cumin, grated garlic, salt, and pepper.
  2. Place the chicken in a resealable freezer bag and pour in the marinade. Seal the bag and massage it to coat the chicken evenly. Refrigerate for at least two hours.
  3. Preheat your grill to 400°F (204°C) and lightly oil the grates.
  4. Grill the marinated chicken for 6–8 minutes per side or until it reaches an internal temperature of 160–165°F (71–74°C). Let it rest for 5 minutes before slicing.
  5. While grilling, mix together diced watermelon, red onion, jalapeño, cilantro, and lime juice in a bowl for the salsa. Season with salt to taste.
