  • 1 1/2 pounds boneless skinless chicken thighs (or breasts)

  • 3 tablespoons water
  • 2 tablespoons lemon juice
  • 1 teaspoon grated garlic
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 2 tablespoons chopped flat leaf parsley
  • 1 tablespoon chopped fresh dill
  • 1 teaspoon lemon zest
  • 1 cup white or brown rice
  • 1 1/2 cups water (2 cups if using brown rice)
  • 1 tablespoon chopped fresh dill

Instructions

  1. In a glass measuring cup, whisk together tahini, olive oil, water, lemon juice, spices, and herbs.

  3. Preheat grill to medium-high heat (400-425°F) and clean grates.
  4. Grill marinated chicken for 4-6 minutes on each side until it reaches an internal temperature of 165°F.
  5. Allow chicken to rest for 5-10 minutes before serving with rice or salad.
