  • 2 large zucchinis
  • Olive oil
  • Salt
  • Ricotta cheese
  • Fresh basil
  • Lemon juice
  • Cherry tomatoes (optional)

Instructions

  1. Wash the zucchinis and slice them lengthwise into thin strips (about 1/4 inch thick).
  2. Brush both sides of the zucchini strips lightly with olive oil and sprinkle with salt.
  3. Preheat your grill or grill pan over medium-high heat. Grill the zucchini for 2-3 minutes on each side until tender and marked.
  4. In a mixing bowl, combine ricotta cheese, chopped basil, lemon juice, salt, and pepper; mix well.
  5. Place a spoonful of the ricotta mixture at one end of each zucchini strip and roll tightly; secure with a toothpick if needed.
  6. For roasted tomatoes (optional), halve cherry tomatoes, drizzle with olive oil, sprinkle salt, and roast in a preheated oven at 350°F (175°C) for 15-20 minutes.
