  • 2 large egg whites (room temperature)
  • 1/4 tsp cream of tartar
  • 1/2 cup white sugar
  • 1 stick unsalted butter (softened)
  • 2 cups confectioner’s sugar
  • 2 tbsp milk
  • Purple gel food coloring
  • Black decorating frosting

Instructions

  1. Preheat your oven to 200°F and line a baking sheet with parchment paper.
  2. Beat the egg whites in a large bowl until foamy, then add cream of tartar. Gradually add sugar while increasing speed, mixing until bright white with semi-stiff peaks.
  3. Pipe ghost shapes on the prepared baking sheet and bake for 2 hours; turn off the oven and leave them inside for an additional 30 minutes to dry.
  4. While cooling, beat softened butter, confectioner’s sugar, and milk in a separate bowl until smooth. Add purple food coloring until desired shade is reached.
  5. Frost cooled cupcakes with purple buttercream and top each with a meringue ghost. Use black frosting to add eyes and mouths.
