  • 1 3/4 lb boneless, skinless chicken breast
  • 3 cups fresh cubed pineapple
  • 1 1/2 large green peppers
  • 1 large red onion
  • 1/3 cup ketchup
  • 1/3 cup packed dark brown sugar
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup canned pineapple juice
  • 4 Tbsp olive oil (divided, plus more for brushing grill)
  • 1 1/2 Tbsp rice vinegar
  • 4 garlic cloves (minced)
  • 1 Tbsp minced ginger
  • 1/2 tsp sesame oil
  • Salt and freshly ground black pepper

Instructions

  1. In a mixing bowl, whisk together the marinade ingredients: ketchup, brown sugar, soy sauce, pineapple juice, olive oil (2 Tbsp), rice vinegar, minced garlic, minced ginger, sesame oil, salt and pepper.
  2. Place chicken in a resealable bag and pour half of the marinade over it. Seal and refrigerate for at least one hour.
  3. Preheat grill to medium heat (400°F). Toss diced onion and peppers with olive oil and season.
  4. Thread marinated chicken pieces alternately with vegetables and pineapple onto skewers.
  5. Grill the kebabs for about five minutes on each side while basting with reserved marinade until chicken reaches an internal temperature of 165°F.
