  • 500 g chicken breast
  • 1 cup broccoli florets
  • 1 cup green beans
  • red bell pepper
  • yellow bell pepper
  • 2 tbsp vegetable oil
  • 2 cloves garlic
  • 2 tbsp soy sauce
  • 1 tbsp honey or maple syrup
  • 1 tsp sesame oil
  • Salt & pepper to taste
  • 1 cup cooked mixed rice (brown, wild, and white rice blend)
  • Pinch of salt

Instructions

  1. Heat 1 tbsp vegetable oil in a skillet over medium-high heat. Cook chicken pieces until golden brown (5-7 minutes) then remove from pan.
  2. In the same pan, add another tbsp of oil and sauté minced garlic until fragrant (30 seconds). Add broccoli, green beans, red and yellow bell peppers; stir-fry for 3-4 minutes.
  3. Return chicken to the pan. Add soy sauce, honey (or maple syrup), sesame oil, salt, and pepper; stir for an additional 2 minutes.
  4. Serve over warm mixed rice.
