  • 2/3 cup maple syrup or honey
  • 1/4 cup Greek yogurt (plain or vanilla)
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 2/3 cups whole wheat flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a muffin tin by greasing it or lining with muffin liners.
  2. In a large bowl, whisk together pumpkin puree, maple syrup (or honey), Greek yogurt, vegetable oil, egg, and vanilla essence until smooth.
  3. In another bowl, combine whole wheat flour, ground cinnamon, ground nutmeg, baking soda, baking powder, and salt.
  4. Gradually mix the dry ingredients into the wet mixture until just combined; do not overmix.
  5. Fill each muffin cup about two-thirds full with batter.
  6. Bake for approximately 18 minutes or until a toothpick inserted comes out clean.
  7. Let cool in the pan for 5 minutes before transferring to a wire rack.
