  • 1 medium yellow onion, diced
  • 4 teaspoons minced garlic
  • 1 pound ground turkey
  • 4 cups beef broth
  • 28-ounce can fire-roasted crushed tomatoes
  • 15 ounce can kidney beans, rinsed and drained
  • 15 ounce can black beans, rinsed and drained
  • 15 ounce can pinto beans, rinsed and drained
  • 1 tablespoon brown sugar
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup tomato paste

Instructions

  1. In a Dutch oven or large pot, heat olive oil over medium-high heat. Add diced onion and minced garlic; sauté until softened.
  2. Add ground turkey and cook until fully browned.
  3. Stir in spices and tomato paste until well combined.
  4. Pour in beef broth and crushed tomatoes; add rinsed beans. Mix well.
  5. Bring to a boil, then reduce heat and simmer uncovered for 30 minutes.
