  • 2 tablespoons olive oil
  • 2 medium onions, chopped
  • 3 cloves garlic, minced
  • 3 large carrots, peeled and sliced
  • 3 parsnips, peeled and sliced
  • Broth (or water) to cover

Instructions

  1. Prepare the ingredients by chopping the vegetables and cutting the beef into cubes.
  2. In a large pot or Dutch oven, heat olive oil over medium-high heat. Brown the beef cubes in batches for about 4-5 minutes per side.
  3. Remove the browned beef and sauté onions in the same pot for about 3 minutes until softened. Add minced garlic and cook for an additional minute.
  4. Return the beef to the pot, add sliced carrots and parsnips, stir well to combine.
  5. Add enough broth or water to cover all ingredients. Bring to a gentle boil, reduce heat to low, cover, and simmer for at least 1.5 hours until tender.
