  • 1 salmon fillet (skin-on or off)
  • 1 tsp olive oil
  • 1 tsp whole-grain mustard
  • 1 tsp garlic powder
  • 1 tsp dried herbs (parsley, thyme, or oregano)
  • Salt & pepper, to taste
  • Juice of lemon + lemon wedge for serving
  • 1 cup baby potatoes, halved
  • 1 cup cherry tomatoes
  • 1 cup broccoli florets
  • Optional: fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Toss halved baby potatoes with olive oil, garlic powder, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes until golden.
  2. Season the salmon fillet with salt, pepper, mustard, dried herbs, and lemon juice. In a heated skillet, sear skin-side down for about 4 minutes; flip and cook for another 4 minutes until crispy.
  3. Toss cherry tomatoes and broccoli with oil and roast alongside the potatoes for the last 10–12 minutes or sauté in the skillet until tender.
  4. Serve the salmon on a plate with garlic potatoes and veggies; garnish with fresh parsley and serve with lemon wedges.
