  • 1 leg quarter (bone-in, skin-on)
  • 1 tsp olive oil
  • 1 tsp dried thyme or Italian seasoning
  • Salt & pepper, to taste
  • 1 clove garlic, minced
  • 1 cup green beans, trimmed
  • 1 tsp olive oil or butter
  • 1 garlic clove, minced
  • 1 cup baby carrots
  • 1 tsp olive oil
  • 1 tsp honey or maple syrup
  • Pinch of salt & black pepper

Instructions

  1. Preheat your oven to 400F (200C). Rub the chicken leg quarter with olive oil, dried herbs, minced garlic, salt, and pepper. Place it on a baking sheet and roast for 35-40 minutes until golden brown.
  2. Toss baby carrots with olive oil, honey (or maple syrup), salt, and pepper. Spread them out on a baking sheet and roast alongside the chicken for about 25-30 minutes until tender.
  3. In a skillet over medium heat, add olive oil (or butter) and minced garlic. Once fragrant, add trimmed green beans and sauté for approximately 6-8 minutes until bright in color.
  4. Serve the herb roasted chicken hot alongside the roasted carrots and sautéed green beans.
