  • 1 tsp olive oil
  • Pinch of dried herbs (oregano, thyme)
  • Salt & black pepper to taste
  • 1 cup kale, chopped
  • ½ cup cooked quinoa
  • 45 cherry tomatoes, halved
  • ½ cup broccoli florets
  • 23 slices red onion
  • Avocado (sliced)
  • Optional: chili flakes & lemon wedge

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Brush the salmon fillet with olive oil and season with salt, pepper, and dried herbs.
  3. Roast the salmon for 10-12 minutes until cooked through.
  4. In a mixing bowl, combine chopped kale with a splash of olive oil and salt. Add quinoa, steamed broccoli, cherry tomatoes, and onion; mix well.
  5. Assemble your bowl by placing roasted salmon next to the salad mixture. Top with sliced avocado and optional chili flakes.
