  • 4 pounds apples (9 medium-sized), peeled and cored
  • 1 cup apple cider (not vinegar)
  • 3/4 cup light brown sugar
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon kosher salt
  • Juice of half a lemon (about 1 tablespoon)

Instructions

  1. Cook the Apples: In a large pot, combine apples, apple cider, brown sugar, cinnamon, cloves, and salt. Cook over medium-low heat uncovered for about 1 hour until the apples are very soft.
  2. Puree the Mixture: Use a hand blender to puree the mixture until smooth. If needed, transfer it to a regular blender in batches.
  3. Thicken the Puree: Return the pureed mixture to the pot and cook uncovered while stirring occasionally until thickened to a velvety texture (about another hour).
  4. Add Lemon Juice and Store: Stir in lemon juice once thickened. Transfer your homemade apple butter to jars and refrigerate for up to two weeks.
