  • 1 salmon fillet (120–150g)
  • 1 tsp honey
  • 1 tsp soy sauce or tamari
  • 1 cup cooked basmati rice
  • ½ avocado, sliced
  • 1 cup cucumber, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1 tbsp chopped fresh mint
  • 1 tbsp chopped parsley
  • 1 tsp olive oil
  • Squeeze of lemon juice
  • Salt & pepper to taste

Instructions

  1. In a mixing bowl, combine honey, soy sauce, and olive oil. Generously brush this mixture over the salmon fillet.
  2. Heat a non-stick skillet over medium-high heat. Add the marinated salmon and cook for 3–4 minutes on each side until caramelized.
  3. In another bowl, mix together halved cherry tomatoes, chopped mint, parsley, olive oil, lemon juice, salt, and pepper.
  4. Layer cooked basmati rice at the base of a serving bowl. Top with the cooked salmon, sliced avocado, cucumber pieces, and tomato herb salad.
