  • 2 links spicy Italian sausage, crumbled
  • 2 leeks, sliced
  • 1 fennel bulb, sliced
  • 1 large parsnip, diced
  • 1 medium carrot, diced
  • 1 rib celery, diced
  • Salt
  • Black pepper
  • 1 teaspoon Italian seasoning
  • 4 cloves garlic, minced
  • 1 (28 ounce) can whole tomatoes, chopped
  • 1 (15 ounce) can navy beans, drained and rinsed
  • 6 cups chicken stock/broth
  • 1 cup chopped kale
  • 1 tablespoon chopped Italian flat-leaf parsley
  • Squeeze of lemon

Instructions

  1. Heat olive oil in a large soup pot over medium-high heat. Brown the crumbled spicy sausage for several minutes until cooked through.
  2. Add sliced leeks, fennel, parsnip, carrot, and celery. Season with salt, pepper, and Italian seasoning; sauté until tender.
  3. Stir in minced garlic and cook for another minute before adding chopped tomatoes and drained navy beans.
  4. Pour in chicken broth; bring to a simmer and allow to cook for about 20 minutes until veggies are tender.
  5. Turn off the heat and stir in kale, parsley, and lemon juice. Adjust seasoning if needed.
  6. Serve hot, optionally over cooked gnocchi.
