  • 2 tsp baking powder
  • 1 C all-purpose flour
  • 1/3 C sour cream
  • 3 Tb unsalted butter (softened)
  • 1/4 C cream cheese (softened)
  • 3 C powdered sugar
  • 3 Tb lemon curd (room temperature)

Instructions

  1. Preheat your oven to 350°F and line a cupcake pan with paper liners.
  2. In a bowl, cream softened butter and sugar until fluffy. Add the egg, lemon juice, zest, and optional extracts; mix well.
  3. Combine salt, baking powder, and flour; add to the mixture along with sour cream until just mixed.
