  • 2 celery stalks, sliced
  • 3 garlic cloves, minced
  • 1 can (14.5 oz) diced tomatoes
  • ½ cup milk
  • 4 tbsp butter
  • 4 large potatoes, peeled and chopped

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion, sliced carrots, and celery. Cook until soft, about 5-7 minutes. Stir in the minced garlic and cook for an additional minute.
  2. Add the dry lentils to the pot along with the diced tomatoes, vegetable broth, thyme, and bay leaf. Bring the mixture to a boil. Once boiling, lower the heat and let it simmer for 25-30 minutes until lentils are tender.
  3. While the stew simmers, boil chopped potatoes in salted water until tender (about 15-20 minutes). Drain the potatoes thoroughly. Mash them with butter, milk, salt, and pepper until creamy.
