  • 12 ounces dry pasta (farfalle)
  • 1 English cucumber, diced
  • 1 pint cherry tomatoes, halved
  • 2/3 cup sliced kalamata olives
  • 4 ounces crumbled feta cheese
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons red apple vinegar
  • 1 tablespoon lemon juice
  • 2 teaspoons dried oregano, minced
  • 1 teaspoon honey
  • 2 small garlic cloves, minced
  • 1/4 teaspoon freshly-cracked black pepper
  • 1/4 teaspoon salt
  • pinch of crushed red pepper flakes

Instructions

  1. Cook pasta in salted boiling water until al dente; drain and rinse under cold water.
  2. Prepare vegetables: dice cucumber and halve cherry tomatoes.
  3. In a mixing bowl, combine olive oil, vinegar, lemon juice, garlic, oregano, honey, salt, pepper, and red pepper flakes; whisk until blended.
  4. In a large bowl, mix cooled pasta with cucumber, tomatoes, olives, feta cheese, and red onion.
  5. Pour vinaigrette over pasta mixture; toss gently to coat evenly.
  6. Serve immediately or refrigerate for an hour before serving.
