  • 8 corn tortillas (6-inch size)
  • 1 tablespoon cooking oil
  • 8.5 ounces canned corn (drained)
  • 1 1/2 cups cooked chicken, shredded
  • 8 ounces salsa (store-bought or homemade)
  • 2 tablespoons taco seasoning mix
  • 15 ounces black beans (rinsed and drained)
  • 2 cups shredded colby jack cheese
  • Fresh cilantro leaves
  • Tomatoes

Instructions

  1. Preheat the oven to 400°F (200°C). Brush both sides of the corn tortillas with cooking oil and arrange on a baking sheet.
  2. Bake for about 10 minutes until golden brown and crispy, flipping halfway through.
  3. In a mixing bowl, combine shredded chicken, taco seasoning, canned corn, black beans, and salsa. Mix well.
  4. Spoon the chicken mixture onto each tortilla and top with shredded cheese.
  5. Return to the oven for an additional 5 minutes to melt the cheese.
  6. Garnish with cilantro and diced tomatoes; serve immediately with lime wedges.
