  • 1.5 lbs boneless, skinless chicken breasts
  • 2 tbsp Cajun seasoning
  • 8 oz cream cheese
  • 1 cup mozzarella cheese
  • 1 lb rigatoni pasta
  • 4 cloves garlic
  • 4 tbsp butter
  • 1/4 cup all-purpose flour
  • 3 cups milk
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • Salt to taste

Instructions

  1. Cook the rigatoni according to package instructions; drain and set aside.
  2. Toss chicken pieces with Cajun seasoning until evenly coated.
  3. In a skillet, melt 2 tablespoons of butter over medium-high heat; add chicken and cook until golden brown (6-8 minutes). Remove from skillet.
  4. In the same skillet, melt remaining 2 tablespoons of butter and sauté minced garlic until fragrant.
  5. Whisk in flour, then gradually add milk and chicken broth; stir until smooth and simmer.
  6. Stir in cream cheese until melted, then mix in mozzarella and Parmesan cheeses.
  7. Combine cooked pasta and chicken with sauce; transfer to a baking dish and top with extra mozzarella.
  8. Bake at 375°F for 15-20 minutes until bubbly.
