  • 3 1/2 cups all-purpose flour
  • 1 1/4 cups caster sugar
  • 3 tsp baking powder
  • 1/2 tsp fine salt
  • 1/2 cup unsalted butter (softened)
  • 2 large eggs
  • 1 1/2 cups whole milk
  • 1/2 cup vegetable oil
  • 2 tbsp Greek yogurt
  • 1 tsp vanilla extract
  • 2 tbsp cocoa powder
  • 1 tsp strawberry essence
  • 23 drops pink food dye
  • Red candy balls or maraschino cherries
  • 10 Vanilla wafer biscuits cut into wedges
  • Chocolate sprinkles

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with liners.
  2. In a bowl, mix flour, sugar, baking powder, and salt. Add butter and mix until crumbly.
  3. Beat in eggs one at a time; then add milk, oil, yogurt, and vanilla. Mix until smooth.
  4. Divide batter into three bowls; add cocoa powder to one bowl for chocolate flavor and strawberry essence with food dye to another for strawberry flavor.
  5. Fill cupcake liners with layers of vanilla, strawberry, and chocolate batters.
  6. Bake for 20–25 minutes or until a toothpick comes out clean. Let cool completely before frosting.
