  • 2 1/2 cups Diced Peaches (fresh or canned)
  • 1/3 cup Maple Syrup
  • 1 3/4 cup Almond Milk
  • 1/4 cup Dairy-Free Greek Yogurt
  • 1 tablespoon Chia Seeds
  • 1 Flaxseed Egg (1 tablespoon flax meal + 3 tablespoons water)

Instructions

  1. Preheat oven to 350°F (180°C) and lightly grease an 8-inch x 8-inch baking dish.
  2. Prepare the flax egg by mixing flax meal with water; let sit for 10 minutes until thickened.
  3. Dice the peaches and set aside.
  4. In a large bowl, whisk together the flax egg, almond milk, yogurt, melted coconut oil, vanilla extract, and maple syrup.
  5. Stir in oats, chia seeds, shredded coconut, salt, and cinnamon until well combined.
  6. Gently fold in the diced peaches.
  7. Pour the mixture into the prepared baking dish and bake for about 35-60 minutes until golden brown.
