  • 1/2 cup milk
  • 1/2 cup canola oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 cups diced fresh peaches
  • 2 cups powdered sugar
  • 2 tablespoons melted butter
  • 1/3 cup finely diced peaches (peeled and drained of any extra juice)
  • 1/2 teaspoon vanilla extract
  • 12 tablespoons heavy cream or milk (optional)

Instructions

  1. Preheat your oven to 350ºF (175ºC).
  2. In a medium bowl, mix together sugar, milk, canola oil, egg, and vanilla until well combined.
  3. In another bowl, combine flour, baking powder, and salt; stir until mixed.
  4. Gradually add the dry ingredients to the wet mixture and stir gently to combine.
  5. Fold in diced peaches carefully using a rubber spatula.
  6. Pour the batter into a greased 9"x5" loaf pan and bake for 55-60 minutes or until a toothpick comes out clean.
  7. While cooling, prepare the glaze by mixing powdered sugar, melted butter, diced peaches, and vanilla until smooth.
  8. Once cooled completely, drizzle the glaze over the bread before slicing.
