  • ¾ cup crumbled goat cheese
  • ¼ cup extra-virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons honey
  • ½ teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 2 tablespoons honey (for candied pecans)
  • 1 teaspoon curry powder
  • ½ teaspoon turmeric powder
  • ½ teaspoon salt (for candied pecans)
  • 2 teaspoons unsalted butter

Instructions

  1. Preheat the oven to 350°F (175°C). Toss pecans with honey, curry powder, turmeric powder, and salt. Spread on a baking sheet and bake for 10-15 minutes until golden brown.
  2. In a mixing bowl, whisk together olive oil, balsamic vinegar, honey, salt, and black pepper for the dressing.
  3. On a large platter or bowl, layer arugula as the base. Add sliced peaches and blueberries on top. Sprinkle with goat cheese and drizzle with dressing.
  4. Finish by adding the candied pecans for an extra crunch.
