  • ¼ cup red onion (diced)
  • ¼ cup fresh cilantro (chopped)
  • 8 small tortillas (flour or corn)
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tbsp lime juice
  • Optional: jalapeño slices and avocado

Instructions

  1. Marinate the chicken by mixing chili powder, cumin, paprika, and lime juice in a bowl. Coat the chicken thighs and let them marinate for at least 15 minutes.
  2. While the chicken marinates, prepare the pineapple salsa by combining cubed pineapple, diced red onion, chopped cilantro, lime juice, and jalapeño in another bowl. Set aside.
