  • 3/4 cup water
  • 1/2 cup liquid glucose/light corn syrup
  • Few drops black gel food coloring
  • 6 Granny Smith apples (fresh and unwaxed)

Instructions

  1. Grease baking paper and place it on a tray. Insert bamboo skewers into each apple.
  2. In a saucepan, combine granulated sugar, water, corn syrup, and black food coloring. Heat over medium until the mixture simmers.
  3. Once the sugar is dissolved, stop stirring and use a wet brush to wash down any crystals from the saucepan sides.
  4. Cook until the mixture reaches 150ºC (310ºF) or forms hard threads in cold water.
  5. Dip each apple in the caramel mixture and place it on the prepared tray to cool completely before serving.
