  • 4 Mini Pumpkins (or ramekins)
  • 2 cups Heavy Cream
  • 1/3 cup Granulated Sugar (plus extra for topping)
  • 4 large Egg Yolks
  • 1 tsp Vanilla Extract
  • 1 cup Pumpkin Puree
  • 1/2 tsp Ground Cinnamon
  • 1/2 tsp Ground Ginger
  • 1/4 tsp Salt

Instructions

  1. Preheat oven to 325°F (163°C).
  2. If using mini pumpkins, cut off the tops and scoop out seeds; place upright in a baking dish.
  3. In a mixing bowl, whisk heavy cream with granulated sugar until combined. Add egg yolks one at a time, whisking until smooth.
  4. Stir in vanilla extract, pumpkin puree, cinnamon, ginger, and salt until blended.
  5. Pour mixture into prepared ramekins or pumpkins, filling them three-quarters full.
  6. Bake for about 30 minutes until set but slightly jiggly in the center.
  7. Chill at room temperature then refrigerate for at least two hours before serving.
  8. Just before serving, sprinkle granulated sugar evenly over the top and caramelize using a kitchen torch or broiler.
