  • 1 1/2 cups rolled oats
  • 1 cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups pumpkin puree
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease or line a 9×13-inch baking dish.
  2. In a large bowl, combine flour, oats, brown sugar, baking soda, and salt. Pour in melted butter and mix until crumbly.
  3. Press half of the mixture into the bottom of the prepared baking dish for the base layer.
  4. In another bowl, whisk together pumpkin puree, granulated sugar, brown sugar, eggs, pumpkin pie spice, and vanilla until smooth.
  5. Pour the pumpkin filling over the crust evenly.
  6. Sprinkle remaining crumble mixture on top and add optional nuts if desired.
  7. Bake for 30–35 minutes until golden brown and set. Cool completely before slicing.
