  • 1/4 cup almond flour
  • 2 tsp pumpkin pie spice
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup vegan mini marshmallows
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine almond butter, brown sugar, egg, pumpkin puree, and vanilla extract. Mix until smooth.
  3. In another bowl, whisk together almond flour, pumpkin pie spice, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet mixture. Stir until fully combined, then fold in marshmallows and chocolate chips.
  5. Use a cookie scoop to portion out dough onto the prepared baking sheet. Optionally place extra marshmallows on top.
  6. Bake for 10-12 minutes until golden brown. Allow cooling slightly before enjoying.
