  • 110 grams coconut oil
  • 170 grams pumpkin puree
  • 200 grams all-purpose flour
  • 2 teaspoons baking powder
  • 3 teaspoons pumpkin spice
  • 100 grams powdered sugar (for glaze)
  • Milk (for glaze)
  • 1 tablespoon maple syrup (optional)
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 175°C (350°F). Grease and flour a small springform pan (20-22 cm).
  2. In a bowl, beat the eggs and sugar until fluffy. Add coconut oil, pumpkin puree, and vanilla extract; mix well.
  3. Combine the dry ingredients in a separate bowl and gently fold them into the wet mixture until just combined.
  4. Pour the batter into the prepared pan and bake for about 25 minutes, then cover with foil and continue baking for an additional 20 minutes. Check doneness with a toothpick; it should come out clean or slightly damp.
  5. Allow to cool completely before glazing by mixing powdered sugar, milk, and maple syrup until smooth.
