  • 23 tablespoons strawberry puree
  • 23 tablespoons blueberry puree
  • A few drops of red and blue gel food coloring
  • 3 ½ sticks unsalted butter, softened
  • 3 cups sifted confectioners’ sugar
  • 3 tablespoons milk
  • 1 tablespoon vanilla extract
  • 1 teaspoon pure vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare four 8-inch cake pans by greasing and lining them with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In an electric mixer, cream together butter and sugar until fluffy. Add eggs one at a time, followed by vanilla.
  4. Gradually incorporate the dry ingredients into the wet mixture, alternating with milk until just combined.
  5. Divide the batter into portions to create red and blue layers using fruit purees and gel food coloring.
  6. Bake for 30–35 minutes or until a toothpick comes out clean.
  7. Cool completely before leveling the cakes and frosting.
