  • 1 teaspoon garlic powder
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper

  • 1 cup ricotta cheese
  • 2 tablespoons heavy cream
  • 1 teaspoon lemon zest
  • Pinch of salt
  • Pinch of pepper
  • ½ cup honey
  • 1 teaspoon chili flakes
  • 1 teaspoon apple cider vinegar
  • 2 tablespoons chopped pistachios for garnish
  • 1 tablespoon fresh parsley or chives, minced

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss carrots in a mixing bowl with olive oil, paprika, garlic powder, sea salt, and black pepper until well coated.
  3. Spread the seasoned carrots on a baking tray in one layer.
  4. Roast them for about 20-25 minutes, flipping once halfway through until they are golden and tender.
  5. In a blender or food processor, combine ricotta cheese, heavy cream, lemon zest, salt, and pepper.
  6. Blend until smooth and creamy.
  7. Chill in the refrigerator until ready to serve.
  8. In a small saucepan over low heat, warm honey gently.
  9. Stir in chili flakes and let it steep for about 12 minutes.
  10. Remove from heat and add apple cider vinegar; allow it to cool slightly.
  11. Spread the whipped ricotta on a serving plate as a base.
  12. Layer roasted carrots on top of the ricotta.
  13. Drizzle generously with hot honey for added flavor.
