  • 1/4 cup Dijon mustard
  • 3 tbsp honey
  • 2 tbsp olive oil
  • 5 cloves garlic, minced

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, combine Dijon mustard, honey, olive oil, and minced garlic to create a smooth glaze.
  3. Season the trimmed lamb leg generously with salt and pepper. Coat it thoroughly with half of the prepared glaze.
  4. Place the lamb in a roasting pan and roast for about 1 hour and 30 minutes or until the internal temperature reaches 135°F (57°C) for medium-rare. Baste with remaining glaze every 30 minutes.
  5. Remove from oven and let rest for at least 15 minutes before slicing.
