  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • Pinch of salt
  • 1 teaspoon vanilla extract
  • 5 large egg yolks
  • Roasted strawberries

Instructions

  1. Preheat your oven to 375°F (190°C). Slice fresh strawberries in half, spread them on a baking sheet, and roast for about 15-20 minutes until soft and caramelized.
  2. In a medium saucepan over medium-low heat, mix 1 cup of heavy cream, whole milk, sugar, salt, and vanilla extract. Stir until sugar dissolves and heat until steaming (do not boil).
  3. In a small bowl, whisk together egg yolks. Slowly add one-third of the hot milk mixture to the yolks while whisking constantly to avoid curdling. Return the egg mixture to the saucepan.
  4. Stir until thick enough to coat the back of a spoon. Pour through a mesh strainer into a bowl with the remaining heavy cream and stir well.
  5. Cool the mixture using an ice bath, then refrigerate overnight.
  6. Churn in an ice cream maker according to manufacturer's instructions, adding roasted strawberries in the last few minutes of churning. Transfer to a freezer-safe container and freeze until firm.
