  • 2 lbs beef chuck, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 3 carrots, peeled and sliced
  • 3 celery stalks, chopped
  • 3 medium potatoes, diced
  • 1 tbsp tomato paste
  • 4 cups beef broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and black pepper to taste
  • Oven-safe bread bowls

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sear beef cubes until browned on all sides (5-7 minutes). Remove and set aside.
  2. In the same pot, sauté onions and garlic until translucent (3-4 minutes). Add carrots, celery, and potatoes; cook for another 5 minutes.
  3. Return beef to the pot along with tomato paste, beef broth, thyme, rosemary, salt, and pepper. Stir to combine.
  4. Bring to a boil then reduce heat to low. Cover and simmer for about 2 hours or until beef is tender.
  5. While the stew simmers, preheat the oven as per bread bowl packaging instructions and bake until crusty.
  6. Serve the warm stew in baked bread bowls.
