  • 1 tablespoon olive oil
  • 1 teaspoon chipotle chili powder
  • 1 bag tortilla chips
  • 1 cup shredded cheese (dairy or non-dairy)
  • ½ cup black beans (cooked or canned)
  • ½ cup corn kernels
  • Fresh toppings: diced tomatoes, jalapeños, red onion, cilantro

Instructions

  1. Heat olive oil in a skillet over medium heat. Add shredded tofu and spices (chipotle powder, smoked paprika, cumin, salt, and pepper). Cook for 5–7 minutes until golden brown.
  2. Preheat the oven to 375°F (190°C).
  3. On a baking sheet, spread tortilla chips evenly. Layer cooked tofu over the chips followed by cheese, black beans, corn, tomatoes, jalapeños, and red onion.
  4. Bake for 10–12 minutes until the cheese is melted and bubbly.
  5. Garnish with chopped cilantro before serving warm with sour cream or guacamole.
