  • 2 medium zucchini (cubed)
  • 1 onion (cut into ¾ inch pieces)
  • 1 bell pepper (any color, cut into ¾-inch pieces)
  • 4 fully cooked sausages (sliced into circles ¼-inch thick)
  • 2 ½ tbsp olive or avocado oil
  • ¼ tsp garlic powder
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • ¼ tsp onion powder
  • ¼ tsp black pepper
  • ½ tsp salt
  • 1 tsp fresh garlic (minced)

Instructions

  1. Heat 1 tablespoon of olive oil in a skillet over medium-high heat.
  2. Add the sliced sausage to the skillet and sauté until browned. Remove from the pan.
  3. In the same skillet, reduce heat to medium and add remaining oil along with zucchini, onion, and bell pepper. Season with herbs and spices.
  4. Cook until vegetables are tender, about 5 minutes.
  5. Return sausage to the skillet with minced garlic and stir well. Cover to meld flavors for a few minutes before serving.
