  • 3 tablespoons butter (divided)
  • 2 small zucchini (thinly sliced)

  • 1 small yellow onion (diced)
  • 1 pound small button mushrooms (cleaned)
  • 3 to 4 cloves garlic (minced)
  • 2 teaspoons fresh chopped herbs (or 1 teaspoon dried herbs)
  • ¼ cup vegetable broth
  • Chopped fresh parsley (for garnish)

Instructions

  1. Heat olive oil and ½ tablespoon butter in a large skillet over medium-high heat.
  2. Add zucchini slices; season with salt and pepper. Cook for 3-4 minutes until tender. Remove and set aside.
  3. In the same skillet, melt remaining butter; add onions. Sauté for about 2 minutes until softened.
  4. Stir in mushrooms; cook for 5-7 minutes until browned.
  5. Add garlic and herbs; cook for an additional 20 seconds until fragrant.
  6. Return zucchini to the skillet; mix well and heat through for about 1 minute.
  7. Pour in vegetable broth; cook for another 2 minutes to blend flavors.
  8. Adjust seasoning if necessary, then garnish with parsley before serving.
