  • 8 lb bone-in beef shoulder
  • olive oil
  • 1/4 cup light brown sugar
  • 2 Tbsp black pepper
  • 2 Tbsp kosher salt
  • 1 Tbsp paprika
  • 1 Tbsp garlic powder
  • 1 Tbsp dried minced onions
  • 1 tsp cayenne pepper
  • 1/4 cup apple juice
  • 1/4 cup apple cider vinegar

Instructions

  1. Trim excess fat from the beef shoulder and rinse it under cold water. Pat dry and rub with olive oil.
  2. In a bowl, combine brown sugar, black pepper, salt, paprika, garlic powder, dried onions, and cayenne. Generously apply the rub all over the beef.
  3. Preheat your smoker to 225°F to 250°F (107°C to 121°C).
  4. Smoke the beef for approximately 12-15 hours until the internal temperature reaches around 195°F (90°C).
  5. After cooking, wrap the meat in aluminum foil and let it rest for at least one hour before shredding.
