  • 1.5 lbs beef chuck, cut into 1-inch cubes
  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1.5 tsp cayenne pepper, adjust to taste
  • 1 tsp ground turmeric
  • 1 tsp garam masala
  • 1/2 tsp cinnamon
  • 1 (14 oz) can crushed tomatoes

Instructions

  1. Heat vegetable oil in a large pot over medium-high heat. Sear the beef cubes in batches until browned, about 3-4 minutes per side. Remove and set aside.
  2. In the same pot, lower the heat to medium and sauté the chopped onion until softened (5-7 minutes). Add minced garlic and ginger; cook for an additional minute.
  3. Stir in the spices: cumin, coriander, cayenne pepper, turmeric, garam masala, and cinnamon. Mix well with onions.
  4. Add crushed tomatoes and return seared beef to the pot. Stir everything together.
  5. Bring to a gentle boil, then reduce heat to low. Cover and simmer for at least 1.5-2 hours until beef is tender.
