  • 1 cup homogenized milk
  • 1 teaspoon baking soda
  • 2 tablespoons butter
  • 1 cup dark brown sugar
  • 2 eggs (room temperature)
  • 2 teaspoons pure vanilla extract
  • 1 ½ cups unbleached all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon kosher salt
  • Sea salt flakes
  • ½ cup butter (for caramel sauce)
  • 1 cup brown sugar (for caramel sauce)
  • ½ cup cream (for caramel sauce)
  • ¼ teaspoon kosher salt (for caramel sauce)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly butter an 11 x 8-inch casserole dish.
  2. In a small bowl, combine chopped dates and baking soda. Heat the milk in a saucepan until scalding and pour it over the dates; let cool for about 15 minutes.
  3. In another bowl, mix flour, baking powder, and salt. In a food processor, blend eggs, dark brown sugar, butter, and vanilla extract until combined. Slowly add dry ingredients and soaked dates; blend until smooth.
  4. Pour the batter into the prepared dish and bake for approximately 30 minutes or until set.
  5. While baking, prepare the salty caramel sauce by melting butter in a saucepan and stirring in brown sugar and salt until dissolved. Add cream and simmer until thickened.
  6. Poke holes in the baked pudding and pour one-third of the caramel sauce over it; let soak for 15 minutes before serving.
