  • 0.3 ounces sugar-free strawberry Jell-O (1 package)
  • 4 egg whites
  • ⅓ cup canola oil
  • 1 cup frozen unsweetened strawberries (thawed)
  • ½ cup water
  • ⅓ cup softened butter
  • 2⅓ cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, mix the white cake mix with the sugar-free strawberry Jell-O until combined. Add egg whites and canola oil; beat until smooth.
  3. Mash thawed strawberries in a small bowl, reserving 3 tablespoons for frosting. Mix remaining strawberries and water into the batter.
  4. Pour the batter evenly into prepared pans and bake for 20-25 minutes or until a toothpick comes out clean. Cool cakes for 10 minutes before transferring to wire racks.
  5. For the frosting, combine softened butter with reserved mashed strawberries and gradually add powdered sugar, beating until fluffy.
  6. Layer cooled cakes with half of the frosting on the first layer, then top with the second layer and frost generously.
