  • 1/2 teaspoon ginger
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup soy sauce
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon sriracha
  • 2 cups cooked rice (white or brown)
  • 1 (20 ounce) can pineapple chunks, drained
  • Chopped green onions, for garnish

Instructions

  1. In a large bowl, combine ground beef, panko bread crumbs, chopped onion, minced garlic, egg, soy sauce, honey, sriracha, ginger, salt, and pepper. Mix until just combined.
  2. Form the mixture into 1-inch meatballs.
  3. Heat a skillet over medium heat and cook the meatballs for 5-7 minutes on each side until golden brown.
  4. In a separate bowl, whisk together soy sauce, honey, rice vinegar, and sriracha for the sauce.
  5. Serve meatballs over cooked rice topped with pineapple chunks and drizzle with sauce.
