  • 4 ears of corn
  • 2 ripe peaches, sliced or diced
  • ¼ cup red onion, finely chopped
  • 3 tablespoons cilantro, chopped
  • 1 medium jalapeño, deseeded & thinly sliced or diced
  • 12 large avocados, diced
  • 3 tablespoons lime juice
  • 3 teaspoons honey
  • Salt & black pepper to taste

Instructions

  1. Cook the corn using your preferred method until tender. Let it cool before cutting off the kernels.
  2. In a bowl, whisk together lime juice and honey until well combined.
  3. In a large mixing bowl, combine corn, peaches, red onion, cilantro, and jalapeño. Gently toss with the vinaigrette until fully coated. Season with salt to taste.
  4. Cover and chill in the refrigerator for 10-20 minutes before serving.
  5. Just before serving, top with diced avocado or mix it into the salad.
