  • 1 medium sweet potato, peeled and diced
  • 1/2 avocado, sliced
  • 1/2 cup cottage cheese
  • 1 tsp olive oil
  • Salt to taste
  • Pepper to taste
  • Paprika to taste
  • Garlic powder to taste
  • 1/2 tsp hot honey or chili honey

Instructions

  1. Preheat your oven to 400°F (200°C). Toss diced sweet potatoes in olive oil with paprika, garlic powder, salt, and pepper. Spread on a baking sheet and roast for about 25 minutes until golden brown.
  2. Heat a skillet over medium heat; add ground beef and cook until browned and crispy, seasoning with salt and pepper.
