1/2 lb lean ground beef
1 medium sweet potato, peeled and diced
1/2 avocado, sliced
1/2 cup cottage cheese
1 tsp olive oil
Salt to taste
Pepper to taste
Paprika to taste
Garlic powder to taste
1/2 tsp hot honey or chili honey
Instructions
Preheat your oven to 400°F (200°C). Toss diced sweet potatoes in olive oil with paprika, garlic powder, salt, and pepper. Spread on a baking sheet and roast for about 25 minutes until golden brown.
Heat a skillet over medium heat; add ground beef and cook until browned and crispy, seasoning with salt and pepper.
