  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon ground cayenne pepper
  • 1.5 tablespoons minced garlic
  • 2 tablespoons fish sauce
  • 2.5 teaspoons sweet soy sauce
  • 2.5 teaspoons sugar
  • 1/4 teaspoon white pepper
  • 1/3 cup coconut milk (for marinade)
  • 1/2 cup creamy peanut butter
  • 3/4 cup coconut milk (for sauce)
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sugar or to taste
  • 2 tablespoons ground peanut
  • Salt to taste

Instructions

  1. 1. Slice the chicken into strips about 1 inch wide. Combine the marinade ingredients in a bowl and coat the chicken thoroughly. Marinate for at least 30 minutes.
  2. 2. For the peanut sauce, mix all sauce ingredients in a saucepan over low heat, whisking until well combined and heated through.
  3. 3. Remove chicken from marinade and thread onto wooden skewers. Grill on medium heat for about 4 minutes on each side until cooked through.
