  • 1 tablespoon unsalted butter (for dotting on the filling)
  • 2 ¼ cups all-purpose flour
  • 1 tablespoon granulated sugar
  • ½ teaspoon salt
  • 1 cup cold unsalted butter (cut into cubes)
  • 7 tablespoons ice-cold water
  • 1 egg
  • 1 tablespoon milk
  • Coarse sugar or granulated sugar (for sprinkling, optional)

Instructions

  1. Prepare the Cherry Filling: In a mixing bowl, combine cherries with granulated sugar, cornstarch, lemon juice, and almond extract. Allow to rest for 15 minutes.
  2. Make the Pie Crust: Mix flour, sugar, and salt in a bowl. Cut in cold butter until crumbly. Gradually add ice-cold water until dough forms; chill for at least 30 minutes.
  3. Assemble the Pie: Roll out one disc of dough and fit it into your pie dish. Add cherry filling and dot with butter. Roll out the second disc of dough to cover the filling; seal edges.
