  • 12 ounces uncooked pasta (rotini or shells)
  • 2 cups cherry tomatoes (halved)
  • 1 cup mini mozzarella balls
  • 1 whole avocado (for dressing)
  • 1/2 cup diced avocado (for salad)
  • 1/3 cup plain Greek yogurt
  • 1/2 cup fresh basil leaves
  • 3 tablespoons fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook pasta in salted boiling water until al dente. Drain and rinse under cold water.
  2. In a large bowl, combine cooled pasta, halved cherry tomatoes, mini mozzarella balls, and chopped basil.
  3. In a blender, mix whole avocado, Greek yogurt, basil leaves, lemon juice, garlic powder, salt, and pepper until smooth. Add water if needed for consistency.
  4. Pour the dressing over the salad ingredients and gently stir to coat. Fold in diced avocado just before serving.
